伏马菌素毒性及其毒性机制研究进展

Research Progress on Toxicity and Its Mechanisms of Fumonisin

摘要: 伏马菌素是由串珠镰刀菌等产生的一种水溶性真菌毒素,是继黄曲霉毒素之后真菌毒素研究领域的又一热点。本综述对伏马菌素的污染状况、限量标准、毒性及毒性机制等进行了总结和分析。现阶段伏马菌素的污染情况不容忽视,其在食品、中药材、动物饲料等中均有发现,且毒性作用广泛,人畜均可患病,严重危害人畜健康。尽管已有相关研究和部分限量标准出台,但对伏马菌素污染状况的深入调查、相应的检测方法及毒性和毒性机制研究等均需进一步加强,以最终实现对伏马菌素的有效防控。

Abstract: Fumonisins, a group of mycotoxins mainly produced by Fusarium moniliforme, are water soluble and are research hotspots following aflatoxin in the field of mycotoxins. This review summarizes and analyses its contamination circumstances, limit standards, toxicities and mechanisms of these toxicities. The contamination circumstances of fumonisins cannot be ignored, which had been found in foods, traditional medicine and animal feeds. The toxicity of fumonisins is widespread and easily leads to sickness on human and animals. Although relevant research and some limit standards have been issued, advanced investigation of the fumonisin contamination status, corresponding detection Methods, and studies on toxicity and toxicity mechanisms need to be further strengthened to achieve effective prevention of fumonisin.
